2024 Gipsie Jack Dolcetto Rose
Gipsie Jack has made a comeback with Rose after being put on the back burner for 8 + years … made under sufferance by Ben and John, the girls in the office once again had some influence! Parcels of premium Dolcetto fruit from our Pasquin Vineyard in Langhorne Creek is the rebirth of the Gipsie Jack Rose and the end result is one the girls are very happy with, as we hope you are.
Viticulture Notes:
Fruit for this wine was sourced from the “Pasquin” vineyard owned by John Glaetzer and Bill Potts. The vines are spur pruned and trained to a vertical shoot positioned canopy The soils are free draining, sandy loam over a red clay layer.
Winemaking:
The fruit was machine picked, destemmed and crushed to press, spent some time on skins to get the vibrant pinky salmon colour before being pressed. Cold settled, racked, fermented cold to retain aromatics. Post ferment the wine was racked, stabilized and then bottled.
Tasting Notes:
This wine has a beautiful rose pink colour. Very lifted aromatics of rose oil, florals, hand crafted boiled lollies and strawberries and cream. The palate is textured and balanced between sweetness and acidity with the acid contributing to a nice clean finish.
